Banana cake is a moist, soft, and flavorful treat that’s perfect for using up ripe bananas. This cake is great for breakfast, dessert, or even as a snack!
Ingredients:
- 2 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (or regular milk)
Instructions:
- Preheat your oven: Set your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Mash the bananas: In a bowl, mash the ripe bananas until smooth. Set aside.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Cream butter and sugar: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add eggs and vanilla: Beat in the eggs, one at a time, followed by the vanilla extract.
- Combine with dry ingredients: Add the dry ingredients to the wet ingredients in batches, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until smooth.
- Add the bananas: Stir in the mashed bananas.
- Bake: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Frost with cream cheese frosting or enjoy plain!
